Sweet Potato Patties

Simple gluten-free sweet potato patties browned in butter can be a great breakfast with tea, coffee or any other beverage to start off your morning.


  • 2 small white sweet potatoes boiled

  • 1 cup frozen peas and carrots (thawed)

  • 1 cup gluten-free Panko flakes

  • 1 tbsp unsalted butter

  • 6 strawberries sliced (optional)

Instructions for making patties

  1. Peel and mash boiled sweet potatoes in a bowl.

  2. Add thawed peas, carrots and Panko flakes and mix well.

  3. Shape three patties as shown in the picture to the left.

  4. Heat butter in a non-stick pan on medium heat.

  5. Cook patties for five minutes on each side or until browned.

  6. Serve warm with sliced strawberries or any other fruits you desire.
