Chinese egg fried rice is everyone's favorite and is easy to make with leftover rice and vegetables right from your home.
8 cups of cooked cold white rice
1 - 16 ounce pack of frozen peas and carrots
4 tbsp olive oil
4 tbsp soy sauce
1/2 cup of onion chopped
1/2 tsp each of minced garlic and ginger
Salt to taste
Put olive oil in a pan on medium heat and add onions, garlic and ginger to brown.
Add peas and carrots and let it cook for 5-7 minutes.
Whisk four eggs in a bowl and add to the vegetables in the middle of the pan and let the eggs cook.
Add soy sauce to the rice and mix it well. (You will notice the color of rice will turn brownish).
Pour the rice and add salt to taste in the mix and stir everything together until rice starts steaming.
Serve warm (makes up to 4 servings)
