Heart-Shaped Eggs with Fruits and Vegetables


Power breakfast loaded with protein, fruits and vegetables to give a great start to the day.


Ingredients:

  • 2 eggs

  • 1 teaspoon butter

  • 2 cups raw spinach washed

  • 1/4 cup sliced strawberries

  • 1/4 cup raspberries

  • 1/4 cup blackberries

  • 1/4 cup blueberries

  • 2 slices of zucchini

  • Heart shaped metal cookie cutter greased with olive oil





Instructions:

  1. In a non-stick pan melt the butter on medium heat.

  2. Put the cookie cutter right in the middle of the pan.

  3. Crack the egg in the center of metal heart hole and let it cook for 6-8 minutes.

  4. While the eggs are cooking put the sliced zucchini into the same pan and brown each side in butter.

  5. In a plate put the raw spinach, fruits and transfer the eggs and zucchini to the plate.

  6. Serve warm and enjoy!
