Baked Samosa


Baked samosa is an excellent appetizer or snack anytime of the day. You can enjoy it with tea, coffee or any drink you prefer. Healthy, oil free and very filling.


Ingredients:

  • 8-10 medium yellow potatoes boiled

  • 1 16-ounce pack of frozen green peas and carrots

  • 1 pack of egg roll wrap

  • 2 Tablespoons of ground cumin

  • 1 Teaspoon of garlic and ginger minced

  • Salt and paprika, to taste

  • 12 muffin baking cups

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit. Line a muffin tray with baking cups.

  2. Peel the boiled potatoes and mash it with fork in a bowl.

  3. Add thawed peas and carrots, cumin, garlic, ginger, salt and paprika and mix well.

  4. Put egg roll wrap into each baking cup and fill the cups with 2 tablespoons of the mix and fold to close top. It will easily seal with warm water or you can use egg wash.

  5. Bake for approximately 25 minutes or until cooked through. For extra crispy samosa, bake for around 30 minutes.

  6. Serve warm with ketchup, salsa or any other dip you desire.
