Chicken Chili

Chicken Chili is loaded with tons of fiber and can be enjoyed for lunch or dinner. It's quick and easy fix for your family in less than 30 minutes.


1 pound ground chicken breast

2 - 15 oz can of diced tomatoes

1 - 15 oz can of pinto bean

1 - 15 oz can of kidney bean

2 tbsp olive oil

1/4 tsp dried basil

1/4 tsp dried oregano

1 tsp chili powder

1 tsp paprika

1 tsp salt

1 tsp ground cumin

1/2 tsp garlic powder

6 cups of water

Let's make chili!

  1. Heat olive oil in a pot over medium heat, add chicken, basil, oregano, chili powder, paprika, salt, cumin and garlic powder. Mix well and stir occasionally until meat is browned.

  2. Add tomatoes, pinto, kidney beans and water to the mix stir and bring to a boil.

  3. Lower to medium heat and simmer for 15 minutes. Serve warm with bread or you can enjoy plain. (Makes up to four servings)
