Cashew Chicken Stir Fry is so delicious and easy to make. It is a meal you can enjoy for lunch or dinner. Anytime you are craving Asian food, the crunchy cashews give it that extra flavor mixed with the vegetables of your choice .

Ingredients:
1 pound boneless skinless chicken thigh, cut into one inch pieces
2 tbsp olive oil
1 zucchini sliced
1 head of broccoli sliced
1 medium yellow onion diced
1 cup of cashews
1/2 tsp minced garlic
1/2 tsp minced ginger
Salt to taste
Rainbow chard greens chopped (optional or substitute with any greens of your choice)
Stir Fry Sauce
1/2 tsp crushed red chili pepper
2 tbsp soy sauce
2 tbsp Worcestershire sauce
2 tbsp water
2 tbsp cornstarch
2 tbsp honey
Let's cook the stir fry
Prepare the sauce by whisking all the ingredients together in a bowl and set it aside.
Heat oil in a large skillet on medium heat, add onion and brown.
Add chicken, salt to taste and cook until browned and cooked through.
Toss zucchini, broccoli, rainbow chard, garlic and ginger. Stir occasionally until slightly tender but still maintains some crunch.
Pour stir fry sauce and stir gently until mixed well.
Remove from heat, add cashews and stir to mix all the ingredients.
Serve with rice and/or chow mein if desired.
